Ingredients:
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 5 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 teaspoon sugar
- 2 tablespoons olive oil
- 2 pounds chicken thighs and drumsticks
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions:
1. In a large bowl, mix together the soy sauce, vinegar, garlic, bay leaves, peppercorns, and sugar.
2. Add the chicken to the marinade and turn to coat. Cover and let marinate in the refrigerator for at least 1 hour, or overnight.
3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken with the marinade and cook for about 10 minutes, flipping the chicken occasionally.
4. Reduce the heat to low and cook for an additional 10 minutes, or until the chicken is cooked through.
5. In a small bowl, whisk together the cornstarch and water to form a paste.
6. Slowly add the cornstarch mixture to the chicken and stir until the sauce thickens.
7. Serve the chicken adobo over cooked white rice. Enjoy!
