Ingredients
- 2 cups cottage cheese
- 4 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- 2 tablespoons turbinado sugar (optional, for topping)
- Zest of 1 lemon
Instructions
1. Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish with butter or cooking spray.
2. In a large mixing bowl, combine the cottage cheese, eggs, honey, and vanilla extract. Whisk until well blended and smooth.
3. In a separate bowl, mix the flour, baking powder, and salt.
4. Gently fold the dry ingredients into the cottage cheese mixture until just combined. Be careful not to overmix.
5. Fold in 1 1/2 cups of the blueberries and the lemon zest, reserving the remaining 1/2 cup for topping.
6. Pour the batter into the prepared baking dish. Sprinkle the remaining blueberries on top.
7. If desired, sprinkle turbinado sugar over the top for a crunchy, caramelized finish.
8. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
9. Let the breakfast bake cool for 10 minutes before serving.
