Cranberry Dijon Pork Loin Roast with Apple Cider Glaze

Ingredients:

For the Pork Loin:

2–3 lb pork loin roast

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil


For the Glaze:

1 cup apple cider (or apple juice)

1/2 cup Dijon mustard

1/3 cup honey

1/2 cup dried cranberries

1 apple, peeled, cored, and diced

2 tbsp butter

1/4 tsp cinnamon

Fresh thyme for garnish (optional)


Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).


2. Sear the Pork:
Season the pork loin with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork loin on all sides until golden brown (about 4–5 minutes per side). Remove and set aside.


3. Prepare the Glaze:
In the same skillet, melt butter over medium heat. Add diced apples and sauté until softened (3–4 minutes). Stir in cranberries, apple cider, honey, Dijon mustard, and cinnamon. Let it simmer for 5 minutes until slightly thickened.


4. Roast the Pork:
Return the pork loin to the skillet, spoon some glaze over the top, and transfer the skillet to the oven. Roast for 25–30 minutes, basting with glaze every 10 minutes, until the internal temperature reaches 145°F (63°C).


5. Rest and Serve:
Remove the pork from the oven and let it rest for 10 minutes. Slice and serve with additional glaze drizzled on top. Garnish with fresh thyme if desired.
