Crispy Zucchini Stacks: A Delicious and Healthy Recipe

Crispy zucchini stacks are a delightful and healthy appetizer or side dish that combines tender zucchini with savory cheese and a crispy topping. Here's a simple recipe you can try:

Ingredients:

1 large zucchini, thinly sliced (about 1/8 inch thick)

2 large eggs, beaten

3/4 cup grated Parmesan cheese

1/3 cup flour of choice (all-purpose, whole wheat, or chickpea)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Black pepper to taste

Cooking spray

Instructions:

1. Prepare the Oven and Baking Sheet:

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper and lightly coat it with cooking spray.

2. Set Up Dredging Stations:

In three separate bowls:

Place the beaten eggs in the first bowl.

Add the grated Parmesan cheese to the second bowl.

Combine the flour, garlic powder, onion powder, and black pepper in the third bowl.


3. Assemble the Zucchini Stacks:

Take 5-6 zucchini slices and dredge them in the following order:

First, dip them into the beaten eggs, allowing any excess to drip off.

Next, coat them with grated Parmesan cheese.

Finally, dip only the tops and bottoms of each stack into the flour mixture.

Repeat this process to create multiple stacks.

4. Bake the Zucchini Stacks:

Place the assembled zucchini stacks onto the prepared baking sheet.

Bake in the preheated oven for 35-40 minutes, or until the stacks are golden brown and crispy.


5. Serve:

Remove from the oven and let them cool slightly.

Serve warm, optionally with a dipping sauce like tzatziki.
