Ingredients:
½ cup fine bulgur
1 cup boiling water
¼ teaspoon kosher salt (plus more to taste)
1½ cups finely chopped fresh parsley (packed)
1 cup finely diced ripe tomatoes
½ cup finely chopped fresh mint leaves
3 scallions, thinly sliced
¼ cup extra-virgin olive oil
3 tablespoons fresh lemon juice (about 1 lemon)
Pinch of crushed red pepper flakes (optional)

Instructions:
1. Soften the Bulgur:
Place the bulgur in a large bowl and pour the boiling water over it. Add ¼ teaspoon salt and stir. Cover the bowl with plastic wrap or a plate and let it sit for 10 minutes. Fluff with a fork, then refrigerate until cool. If there’s any excess water, drain it before refrigerating.
2. Combine Fresh Ingredients:
Once the bulgur is cool, add the parsley, tomatoes, mint, and scallions to the bowl. Gently toss to combine.
3. Make the Dressing:
In a small bowl, whisk together the olive oil, lemon juice, and a pinch of crushed red pepper flakes (if using). Pour the dressing over the bulgur mixture and toss well. Taste and adjust seasoning with additional salt or lemon juice as needed.
4. Chill and Serve:
