1. Gather all the necessary ingredients:
2 large eggplants, diced
2 tablespoons vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
2 tomatoes, diced
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh cilantro, chopped (for garnish)
2. Pre-cut the eggplants, onion, garlic, ginger, and tomatoes to save time during the lesson.
3. Preparation (10 minutes):
Instruct students to wash and dice the eggplants, chop the onion, mince the garlic, grate the ginger, and dice the tomatoes.
Divide the class into small groups and assign each group a specific task to complete the preparation process efficiently.
4. Cooking (15 minutes):
Heat the Instant Pot on the sauté mode and add oil.
Once the oil is hot, add cumin seeds and mustard seeds. Allow them to splutter.
Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions turn translucent.
Add the diced tomatoes and green chilies. Cook until the tomatoes soften.
Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
Add the diced eggplants and stir to coat them with the spice mixture.
Cancel the sauté mode and close the Instant Pot lid. Set the pressure cook mode for 5 minutes.
Once the cooking time is complete, allow the pressure to release naturally for 5 minutes, then manually release the remaining pressure.
Open the Instant Pot lid and give the dish a gentle stir.
5. Serving (5 minutes):
Transfer the Instant Pot Indian Spicy Eggplant to a serving dish.
Garnish with fresh cilantro leaves.
Serve hot with rice or naan bread.
