Recipe: Refreshing Shrimp and Avocado Salad

This light and creamy shrimp and avocado salad is the perfect dish for a warm day. Combining fresh, juicy shrimp with the creaminess of avocado and a zesty lime dressing, this salad is easy to prepare and full of nutrients. Serve it as a main dish or a side for any occasion!

Ingredients:

1 lb cooked shrimp, peeled and deveined

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

2 tbsp fresh lime juice

Salt and pepper, to taste

Fresh herbs (such as cilantro or parsley), finely chopped (optional)


Instructions:

1. In a large mixing bowl, combine the cooked shrimp, diced avocado, cherry tomatoes, cucumber, and red onion.


2. Drizzle the fresh lime juice over the mixture. Add salt and pepper to taste.


3. Gently toss the ingredients to combine, ensuring the avocado remains intact.


4. Sprinkle with fresh herbs if desired.


5. Serve immediately or chill in the refrigerator for 15-20 minutes for an even more refreshing experience.


Tips:

To add a bit of crunch, consider tossing in some toasted almonds or sunflower seeds.

You can substitute lime juice with lemon juice for a slightly different citrus flavor.

For a more filling meal, serve the salad over a bed of greens or quinoa.
