Ingredients
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup red bell peppers, diced
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp Italian seasoning
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
2. Make the Stuffing:
In a bowl, combine chopped spinach, red bell peppers, mozzarella cheese, Parmesan cheese, and minced garlic. Mix until well combined.
3. Stuff the Chicken:
Fill each chicken breast pocket with the prepared stuffing mixture. Use toothpicks to secure the openings if necessary.
4. Season the Chicken:
In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper.
Rub the seasoning mixture evenly over both sides of the stuffed chicken breasts.
5. Cook the Chicken:
Heat olive oil in a large oven-safe skillet over medium heat.
Sear the stuffed chicken breasts for 2–3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
6. Garnish and Serve:
Remove the chicken from the oven and let it rest for 5 minutes.
Sprinkle fresh parsley on top and serve warm.
