Recipe: Olive & Fig Tapenade
Serves: 4 to 6 | Prep Time: 25 minutes

Ingredients:

½ cup packed dried Black Mission figs, stemmed and quartered (about 5.5 oz.)

1 cup pitted Kalamata olives

1 tbsp balsamic vinegar

1 tbsp capers, drained

2 tsp whole-grain mustard

1 tsp fresh thyme leaves

1 small clove garlic, coarsely chopped

⅓ cup extra-virgin olive oil

1 tbsp fresh lemon juice

Pinch of crushed red pepper flakes (optional)

Kosher salt and freshly ground black pepper, to taste

Chopped fresh parsley, for garnish


Instructions:

1. Soften the Figs: Place figs in a small heatproof bowl and cover with boiling water. Let sit until plump and soft, about 8 to 10 minutes. Drain.


2. Blend Ingredients: In a food processor, combine rehydrated figs, olives, balsamic vinegar, capers, mustard, thyme, and garlic. Pulse until a chunky paste forms.


3. Incorporate Olive Oil: With the motor running, slowly drizzle in olive oil. Process until mostly smooth, scraping down the sides of the bowl as needed, about 2 to 3 minutes.


4. Adjust Flavor: Add lemon juice (start with less and adjust to taste) and crushed red pepper flakes (if using). Season with salt and black pepper.


5. Serve: Transfer the tapenade to a serving bowl, garnish with chopped parsley, and enjoy!
