In churrascarias or the traditional Brazilian-style steakhouse restaurants, servers come to the table with knives and a vertically-held skewer, on which are speared various kinds of premium cuts of meat, most commonly local cuts of beef, pork, chicken, lamb, and sometimes atypical or exotic meats.
The traditional Brazilian steakhouse, or churrascaria, is a unique dining experience that has been passed down through generations. Churrasco originated in southern Brazil where local cowboys, called gauchos, would prepare legendary feasts on their ranches. The gauchos were well known for their skill in preparing meat over an open fire and the mastery of the art is still used to this day in churrascarias.
The meat is cooked over a slow-burning charcoal or wood fire for a few hours, allowing the flavors of the wood and smoke to permeate the meat. The result is a tender, juicy steak that is packed with flavor. Traditionally, the meats are served on large metal skewers and cut tableside by servers called pass adores.
The passadores will also present the guests with an array of side dishes, called a companhamentos, which typically include salads, rice, french fries, and other traditional Brazilian fare. Diners are encouraged to try all of the options offered and to enjoy them in combination with the grilled meats.
